If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Trim zucchini ends, quarter, and cut into 1/2" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Zest and halve lime. Cut one half into wedges and juice the other half.Pat pork chops dry. Season both sides with fiesta seasoning and a pinch of salt. -
2 Cook the Pork Chops
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add pork chops to hot pan. Cook until golden-brown and pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side.Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner.Remove from burner. Rest, 3 minutes.While pork cooks, continue recipe. -
3 Cook the Vegetables
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add corn, chile and cumin rub, 1/4 tsp. salt, and zucchini to hot pan. Stir occasionally until slightly browned and tender, 4-5 minutes.Remove from burner. Stir in 1 tsp. lime zest and 2 tsp. lime juice until combined.While vegetables cook, continue recipe. -
4 Make Chipotle Butter and Finish Dish
In a microwave-safe bowl, combine butter and pesto (to taste).
Microwave uncovered until heated through, 30-60 seconds.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, topping pork chop with chipotle butter (to taste). Slice pork chop, if desired. Garnish vegetables with cheese and sour cream. Squeeze lime wedges over to taste. Bon appétit!
