Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Prepare the Ingredients
Halve lime. Cut one half into wedges (remaining half is yours to use as you please!).
Trim and thinly slice green onions, keeping white and green portions separate.Stem poblano pepper, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.Pat sliced pork dry. Coarsely chop, then separate pieces. Season all over with chili powder (use less if spice-averse) and garlic salt. -
2 Start the Filling
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add poblanos (to taste) and a pinch of salt to hot pan. Stir often until slightly tender, 3-4 minutes. Add 2 tsp. olive oil and pork. Stir occasionally until browned and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes. -
3 Finish the Filling
Add corn, white portions of green onions, and chimichurri seasoning to hot pan. Stir often until corn is heated through, 1-2 minutes.
Remove from burner. Rest, 3 minutes.Transfer filling to a heat-safe mixing bowl and set aside. -
4 Assemble the Tacos
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until heated through, 30-60 seconds.
Carefully remove from microwave and transfer to a clean, flat work surface.Poke tortillas with a fork all over, 10 times for each tortilla. Evenly top with 2 tsp. olive oil and massage oil into tortillas.Evenly divide cheese between tortillas, placing on one half. Top cheese with filling (to taste) and chipotle crema. Fold tortillas over filling, pressing gently to adhere.Place tacos on prepared baking sheet. -
5 Bake Tacos and Finish Dish
Bake in hot oven until tacos are crispy and cheese is melted, 10-12 minutes.
Carefully remove from oven.Plate dish as pictured on front of card, topping tacos with salsa (to taste) and green portions of green onions. Squeeze lime wedges over to taste. Bon appétit!
