Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side. If using Impossible burger, break up until protein reaches a minimum internal temperature of 160 degrees, 4-6 minutes. If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side. If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes. Add protein to meal as desired.

1 Start the Peppers
Place a large non-stick pan over medium heat and add 1 tsp. olive oil.
Add diced peppers to hot pan and cook until tender, 5-6 minutes.While peppers cook, continue recipe. -
2 Heat Rice and Prepare Ingredients
Stem and mince cilantro.
Halve lime. Cut one half into wedges and juice the other half.Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Combine rice, 1 Tbsp. lime juice, cilantro, and fiesta seasoning in a microwave-safe bowl. Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork. -
3 Add the Plantains
After 5-6 minutes, add plantains and 1/4 tsp. salt to hot pan with peppers. Stir occasionally until browned, 2-3 minutes.
Remove from burner.While plantains cook, continue recipe. -
4 Make Cheese Sauce and Finish Dish
Place a small pot over medium heat.
Add 2 Tbsp. water, cream cheese, and shredded cheese to hot pot. Stir often until melted and combined, 1-2 minutes.If sauce is too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, topping rice with plantain mixture and cheese sauce. Garnish with tortilla strips. Squeeze lime wedges over dish to taste. Bon appétit!
