- ¾ oz. Roasted Garlic & Herb Butter
- 2 Green Onions
- 1 tsp. Ranch Seasoning
- ½ tsp. Potato Spice Seasoning

1 Start the Potatoes
Prick potatoes all over with a fork.
Place potatoes on a microwave-safe plate and cover with a damp paper towel. Microwave covered until fork-tender, 8-10 minutes.Carefully remove from microwave.Place each potato on a piece of foil and top with 1 tsp. olive oil, potato spice seasoning, and a pinch of pepper. Form a foil pouch around potatoes. Potatoes will be hot! Use a utensil/caution.Place directly on oven rack, opening-side up.Bake in hot oven until potatoes are tender, 20-25 minutes.While potatoes bake, continue recipe. -
2 Bake the Corn and Brisket
In provided tray, add corn, cream base, half the cheese (reserve remaining for topping), 1/4 tsp. pepper, and ranch seasoning. Stir to combine, then push corn mixture to one side of tray. Evenly top with remaining cheese.
Drain brisket and separate slices.Place brisket in empty side of tray and toss with 2/3 the BBQ sauce (reserve remaining for garnish). Cover tray with foil.Bake covered in hot oven until corn and brisket are heated through, 25-30 minutes.Carefully remove from oven.While corn and brisket bake, continue recipe. -
3 Assemble Slaw, Finish Potatoes, and Finish Meal
Trim and thinly slice green onions.
In a mixing bowl, combine slaw mix and dressing. Set aside.After 20-25 minutes, carefully remove potatoes from oven and let cool, 5 minutes. Once cool enough to handle, discard foil and halve potatoes, making sure not to cut all the way through. Evenly divide softened butter and 1/4 tsp. salt between potatoes, fluffing insides with a fork.To serve, top brisket with remaining BBQ sauce and garnish with green onions. Bon appétit!
