To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer.Roast in hot oven until slightly browned and tender, 25-30 minutes, tossing once halfway through.Carefully remove from oven. Stir in cheese and 1 tsp. thyme (to taste; prepared in next step) until fries are coated. Sheet and fries will be hot! Use a utensil.While fries roast, continue recipe. -
2 Roast Garlic and Prepare Ingredients
Place garlic cloves and 1 tsp. olive oil on a piece of foil. Form a foil pouch around garlic and place directly on oven rack, opening-side up.
Roast in hot oven until garlic is tender, 13-18 minutes.Carefully remove from oven. Let cool, 5 minutes.While garlic roasts, stem and mince thyme.Peel and halve shallot. Slice thinly.Pat steak strips dry. Coarsely chop, then separate pieces. Season all over with steak seasoning and a pinch of salt. -
3 Cook the Steak Strips
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add shallots to hot pan. Stir often until softened and slightly browned, 4-5 minutes.Add steak strips and stir occasionally until no pink remains and steak strips reach a minimum internal temperature of 145 degrees, 4-6 minutes.Stir in beef base until combined, 20-30 seconds.Remove from burner. Rest, 3 minutes.While steak strips cook, continue recipe. -
4 Heat the Buns
Heat buns to your preference using a toaster or microwave.
Alternatively, place a large non-stick pan over medium heat and add buns, cut-side down, to hot, dry pan. Toast until lightly browned, 1-2 minutes.While buns heat, continue recipe. -
5 Make Crema and Finish Dish
Once cool enough to handle, transfer roasted garlic to a heat-safe mixing bowl and mash until paste-like. Stir in softened butter and softened creme fraiche until combined.
Plate dish as pictured on front of card, topping bottom bun with crema, steak strips, arugula, then top bun. Bon appétit!
