Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

prepare the ingredients
drain and rinse beans.

Heat a large non-stick pan over medium-high heat.
Add 1 tsp. olive oil and Italian sausage to hot pan. Break into small pieces with a spoon until no pink remains, 4-6 minutes.
assemble the cassoulet
add beans, diced tomato, chicken demi, and oregano to pan.
bring to simmer.
cover with parmesan, and placer under broiler.
1-2 minutes until cheese has browned.
