You Will Need
Prepare the Ingredients
Thoroughly rinse produce and pat dry. Slice green onions on the bias (angle). Slice radishes into thin rounds. Remove tofu from container and drain any remaining liquid. Rinse tofu, pat dry, and cut into ¼" cubes.
Cook the Noodles
Bring a pot of lightly salted water to a boil. Put a colander in the sink. Add soba noodles and cook for 8 minutes, or until tender. Watch closely: soba noodles can cook quickly. Once tender, drain noodles and rinse with cold water. Drain again and set aside.
Mix the Ingredients
In a large mixing bowl, combine cooked noodles, sliced radishes, carrot shreds, edamame, tofu cubes, cashews, radish sprouts (reserving some for garnish), and Sweet Asian dressing. Add salt and pepper to taste.
Plate the Dish
Place a serving of the noodles in a bowl, ensuring an even amount of vegetables, tofu, and cashews in each dish. Garnish with green onions, sesame seeds, remaining radish sprouts, and sambal (which can be spicy to some, so add to taste). Open the chopsticks and enjoy.
