Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground pork, follow same instructions as ground turkey in Steps 2 and 3, baking half-covered in hot oven until pork reaches minimum internal temperature, 20-25 minutes.

    Prepare the Rice and Beans

    Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.

    Stem cilantro and tear leaves.

    Carefully massage rice in bag to break up any clumps. Tear a small slit in an upper corner of bag to vent. Place upright in microwave and heat, 45 seconds.

    Remove rice from microwave.

    Place rice, black beans and their liquid, half the cilantro (reserve remaining for crema), and 1/4 tsp. salt in provided tray and stir to combine. Push to one side.

    Add the Meatballs

    Coarsely crush crackers into crumbs.

    In a mixing bowl, combine ground turkey, crushed crackers, ricotta, jerk seasoning, 1/4 tsp. salt, and a pinch of pepper. Form into 6 evenly-sized meatballs.

    Place meatballs in empty side of tray.

    Bake Meal and Make Crema

    Cover rice side of tray with foil (leaving meatballs uncovered). Bake half-covered in hot oven until meatballs reach a minimum internal temperature of 165 degrees, 20-25 minutes.

    While meal bakes, halve lime and juice.

    In another mixing bowl, combine crème fraîche, remaining cilantro, a pinch of salt, and 1 tsp. lime juice (reserve remaining for garnish).

    Carefully remove tray from oven.

    To serve, top meatballs and rice with jerk sauce and crema and drizzle remaining lime juice over rice, if desired. Bon appétit!
