Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |

  1. 1

    Prepare Ingredients and Make Batter

Trim and thinly slice green onions.

    Drain beans.

Reserve 1 tsp. corn muffin mix. Add remaining corn muffin mix, cheese, and 1/2 cup water to a mixing bowl. Stir until combined and mixture reaches the consistency of pancake batter. If too thick, add additional water, 1 Tbsp. at a time and up to 3 Tbsp., until desired consistency is reached.

  2. 2

    Cook the Beef

Place a large oven-safe non-stick pan over medium-high heat. Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

Carefully drain excess grease from pan. Stir in reserved corn muffin mix and a pinch of salt and pepper.

  3. 3

    Add the Sauce

Add corn, beans, barbecue seasoning (to taste), BBQ sauce, 1/2 cup water, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir occasionally until combined and slightly thickened, 1-2 minutes.

    Remove from burner.

  4. 4

    Assemble the Pie

Top pie with 7-8 dollops of batter.

  5. 5

    Bake Pie and Finish Dish

Transfer pie to hot oven and bake until topping is golden-brown and firm, 20-25 minutes.

Carefully remove from oven. Pan handle will be hot! Use oven mitt.

Serve family-style, topping pie with crema and green onions. Bon appétit!
