1 Prepare Ingredients and Make Batter
Trim and thinly slice green onions.
Drain beans.Reserve 1 tsp. corn muffin mix. Add remaining corn muffin mix, cheese, and 1/2 cup water to a mixing bowl. Stir until combined and mixture reaches the consistency of pancake batter. If too thick, add additional water, 1 Tbsp. at a time and up to 3 Tbsp., until desired consistency is reached. -
2 Cook the Beef
Place a large oven-safe non-stick pan over medium-high heat. Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.
Carefully drain excess grease from pan. Stir in reserved corn muffin mix and a pinch of salt and pepper. -
3 Add the Sauce
Add corn, beans, barbecue seasoning (to taste), BBQ sauce, 1/2 cup water, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir occasionally until combined and slightly thickened, 1-2 minutes.
Remove from burner. -
4 Assemble the Pie
Top pie with 7-8 dollops of batter.
-
5 Bake Pie and Finish Dish
Transfer pie to hot oven and bake until topping is golden-brown and firm, 20-25 minutes.
Carefully remove from oven. Pan handle will be hot! Use oven mitt.Serve family-style, topping pie with crema and green onions. Bon appétit!
