Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |

- Ground Turkey 165° F |
- Ground Pork 160° F

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare the Ingredients
Drain and rinse beans in a colander/strainer.
Halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon and thinly slice. Season all over with a pinch of salt.Core tomato and cut into 1/2" rounds. Season all over with a pinch of salt.Pat sliced pork dry. Coarsely chop, then separate pieces. -
2 Cook the Pork
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add pork, half the fiesta seasoning (reserve remaining for beans), and a pinch of salt to hot pan. Stir occasionally until browned and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes. -
3 Add the Sauce
Add enchilada sauce (to taste), 1 Tbsp. water, 1 Tbsp. salted butter, and a pinch of salt to hot pan. Stir often until combined and pork is coated, 1-2 minutes.
Remove from burner. Rest, 3 minutes.While pork cooks, continue recipe. -
4 Make the Bean Spread
In a microwave-safe bowl, combine beans, 2 tsp. water, remaining fiesta seasoning, and a pinch of salt. Mash with a fork until slightly chunky.
Microwave uncovered until beans are heated through, 1-2 minutes.Carefully remove from microwave and stir in sour cream until combined. Set aside. -
5 Heat Rolls and Finish Dish
Open rolls and heat to your preference using a toaster or microwave.
Alternatively, place a large non-stick pan over medium heat. Add rolls to hot, dry pan, cut-side down, and toast until lightly browned, 1-2 minutes.Plate dish as pictured on front of card, filling roll with bean spread, pork, tomatoes, and avocado. Bon appétit!
