  1. 1

    Roast the Fries

Cut potatoes into 1/4" fries and pat dry.

Place fries on prepared baking sheet and toss with 2 tsp. olive oil, potato spice seasoning, and a pinch of pepper. Spread into an even layer.

Roast in hot oven until browned and tender, 25-30 minutes, tossing once halfway through.

    Carefully remove from oven.

    While fries roast, continue recipe.

  2. 2

    Prepare the Ingredients

    Stem and coarsely chop cilantro.

Stem jalapeño, seed, remove ribs, and slice into thin strips. Wash hands and cutting board after working with jalapeño.

Pat sliced pork dry. Coarsely chop, then separate pieces.

  3. 3

    Cook the Pork

Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.

Add sliced pork and a pinch of salt to hot pan. Stir occasionally until browned and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.

Add pho base and 1/4 cup water. Stir to combine and bring to a simmer.

Once simmering, stir often until water is almost completely evaporated, 2-3 minutes.

Remove from burner. Rest, 3 minutes.

    While pork cooks, continue recipe.

Toast Rolls, Make Spicy Mayonnaise, and Finish Dish

Heat rolls to your preference using a toaster or microwave.

Alternatively, place rolls directly on rack in hot oven, cut-side up. Toast until lightly browned, 3-4 minutes.

In another mixing bowl, combine mayonnaise and Sriracha (to taste).
