If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Cook the Rice
Bring a small pot with rice, 1 1/4 cups water, and 1/4 tsp. salt to a boil.
Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner. Set aside and cover to keep warm.While rice cooks, continue recipe. -
2 Prepare Ingredients and Make Cilantro-Lime Mixture
Zest and halve lime. Juice both halves.
Mince cilantro.Drain and finely chop pineapples.In a mixing bowl, combine cilantro, 1/4 tsp. lime zest, 1 tsp. lime juice (reserve remaining for pineapples), 1 Tbsp. olive oil, and a pinch of salt and pepper. Set aside.Pat pork dry and season both sides with half the piri piri seasoning (use less if spice-averse; remaining is yours to use as you please!). -
3 Cook the Plantains
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add plantains to hot pan. Cook until golden-brown, 2-3 minutes per side.Transfer plantains to a plate and season with a pinch of salt. Keep pan over medium heat; no need to wipe clean. -
4 Cook the Pork
Summertime, and the grilling is easy! To grill these pork chops, heat grill to medium. Follow same instructions, grilling until browned and pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side.

5 Make the Pineapple Compote
Place another medium non-stick pan over medium heat.
Add pineapples, brown sugar, 1 Tbsp. water, and a pinch of salt to hot pan. Stir often until combined and mixture is slightly thickened, 4-6 minutes.Remove from burner. Stir in 1 tsp. lime juice and 1 Tbsp. softened butter until combined.Plate dish as pictured on front of card, topping pork with pineapple compote, then cilantro-lime mixture. Slice pork, if desired.
