Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

    Cook the Rice

    Bring a small pot with rice, 1 1/4 cups water, and 1/4 tsp. salt to a boil.

    Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

    Remove from burner. Set aside and cover to keep warm.

    While rice cooks, continue recipe.

    Prepare Ingredients and Make Cilantro-Lime Mixture

    Zest and halve lime. Juice both halves.

    Mince cilantro.

    Drain and finely chop pineapples.

    In a mixing bowl, combine cilantro, 1/4 tsp. lime zest, 1 tsp. lime juice (reserve remaining for pineapples), 1 Tbsp. olive oil, and a pinch of salt and pepper. Set aside.

    Pat pork dry and season both sides with half the piri piri seasoning (use less if spice-averse; remaining is yours to use as you please!).

    Cook the Plantains

    Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.

    Add plantains to hot pan. Cook until golden-brown, 2-3 minutes per side.

    Transfer plantains to a plate and season with a pinch of salt. Keep pan over medium heat; no need to wipe clean.

    Cook the Pork

    Summertime, and the grilling is easy! To grill these pork chops, heat grill to medium. Follow same instructions, grilling until browned and pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side.

    Add pork to hot pan. Cook until golden-brown and chops reach a minimum internal temperature of 145 degrees, 3-5 minutes per side.

    Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner.

    Remove from burner. Rest, 3 minutes.

    While pork cooks, continue recipe.

    Make the Pineapple Compote

    Place another medium non-stick pan over medium heat.

    Add pineapples, brown sugar, 1 Tbsp. water, and a pinch of salt to hot pan. Stir often until combined and mixture is slightly thickened, 4-6 minutes.

    Remove from burner. Stir in 1 tsp. lime juice and 1 Tbsp. softened butter until combined.

    Plate dish as pictured on front of card, topping pork with pineapple compote, then cilantro-lime mixture. Slice pork, if desired. Bon appétit!
