Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Follow same instructions as ground pork in Steps 2 and 3, stirring occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using ground beef, follow same instructions as ground pork in Steps 2 and 3, breaking up until beef reaches minimum internal temperature, 4-6 minutes.

  • If using ground turkey, follow same instructions as ground pork in Steps 2 and 3, breaking up until turkey reaches minimum internal temperature, 6-8 minutes.

  • If using Impossible burger, follow same instructions as ground pork in Steps 2 and 3, breaking up until burger is heated through, 4-6 minutes.

    Prepare the Green Onions

    Trim and thinly slice green onions, keeping white and green portions separate.

    Start the Soup

    Place a medium pot over medium-high heat and add 1 tsp. olive oil. Add ground pork, 1/4 tsp. salt, and 1/4 tsp. pepper to hot pot. Break up pork until browned, 3-5 minutes.

    Add flour and stir until no dry flour remains.

    While pork cooks, continue recipe.

    Finish the Soup

    Add corn, beans and their liquid, white portions of green onions, tomatoes, chicken base, enchilada sauce, 1/4 tsp. salt, a pinch of pepper, and 1 cup water to hot pot. Stir to combine. Bring to a simmer.

    Once simmering, stir occasionally until slightly thickened and pork reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, garnishing soup with green portions of green onions, sour cream, and tortilla strips. Bon appétit!
