If using diced chicken breasts, pat dry. Follow same instructions as ground pork in Steps 2 and 3, stirring occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using ground beef, follow same instructions as ground pork in Steps 2 and 3, breaking up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, follow same instructions as ground pork in Steps 2 and 3, breaking up until turkey reaches minimum internal temperature, 6-8 minutes.

If using Impossible burger, follow same instructions as ground pork in Steps 2 and 3, breaking up until burger is heated through, 4-6 minutes.

1 Prepare the Green Onions
Trim and thinly slice green onions, keeping white and green portions separate.

2 Start the Soup
Place a medium pot over medium-high heat and add 1 tsp. olive oil. Add ground pork, 1/4 tsp. salt, and 1/4 tsp. pepper to hot pot. Break up pork until browned, 3-5 minutes.
Add flour and stir until no dry flour remains.While pork cooks, continue recipe. -
3 Finish the Soup
Add corn, beans and their liquid, white portions of green onions, tomatoes, chicken base, enchilada sauce, 1/4 tsp. salt, a pinch of pepper, and 1 cup water to hot pot. Stir to combine. Bring to a simmer.
Once simmering, stir occasionally until slightly thickened and pork reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Remove from burner. -
4 Finish the Dish
Plate dish as pictured on front of card, garnishing soup with green portions of green onions, sour cream, and tortilla strips. Bon appétit!
