If using ground beef, roast until meatballs reach minimum internal temperature, 17-20 minutes.

1 Start the Butternut Squash
Halve any large butternut squash pieces to roughly match smaller pieces.
Place butternut squash on prepared baking sheet. Toss with half the savory seasoning (reserve remaining for meatballs), half the dressing (reserve remaining for arugula), and 1/4 tsp. salt. Spread into a single layer.Roast in hot oven, 12 minutes.While butternut squash roasts, continue recipe. -
2 Add the Meatballs
In a mixing bowl, combine ground turkey, poultry seasoning, panko, remaining savory seasoning, 1/4 tsp. salt, and 1/4 tsp. pepper. Form meat mixture into 8 equally-sized meatballs.
After 12 minutes, carefully remove sheet from oven and push butternut squash to one side. Sheet will be hot! Use a utensil.Place meatballs on empty side of sheet and evenly top with 1 tsp. olive oil. Sheet will be hot! Use caution. -
3 Finish the Butternut Squash and Meatballs
Roast in hot oven until butternut squash is tender and meatballs reach a minimum internal temperature of 165 degrees, 15-18 minutes.
Carefully remove from oven.While butternut squash and meatballs roast, continue recipe. -
4 Assemble Salad, Make Crema, and Finish Dish
In another mixing bowl, combine arugula and remaining dressing (to taste). Set aside.
In another mixing bowl, combine cheese, softened creme fraiche, a pinch of pepper, and 4 tsp. water. Set aside.To serve, top meatballs with crema. Garnish salad with pepitas. Bon appétit!
