If using ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

Prepare the Ingredients
Cut potatoes into 1" dice.
In a mixing bowl, combine shredded cheese, half the ricotta (reserve remaining for meatloaves), and a pinch of pepper. Set aside.In another mixing bowl, combine panko and 2 Tbsp. water. Rest, 1 minute.After 1 minute, add remaining ricotta, ground beef, half the onion salt (reserve remaining for potatoes), and a pinch of pepper. Stir until thoroughly combined. Form mixture into four equally-sized patties, about 3" in diameter. -
Form the Meatloaves
Top two patties evenly with cheese mixture. Place remaining patties on cheese-topped patties and seal edges by pinching. A tight seal helps cheese stay in patties while cooking.
Gently form into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. -
Assemble the Vegetables and Loaves
Place loaves on one side of prepared baking sheet and top evenly with 1 tsp. olive oil.
Place potatoes in center of sheet. Top with 2 tsp. olive oil, garlic pepper, remaining onion salt, and a pinch of pepper. Massage oil and seasonings into potatoes.Place carrots on empty side of sheet and top with dressing, 1 tsp. olive oil, and a pinch of salt. Massage dressing, oil, and seasoning into carrots. -
Roast Vegetables and Loaves and Finish Dish
Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove from oven.To serve, top meatloaf with BBQ sauce. Bon appétit!
