If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare Potatoes and Make Cream Cheese Topping
Cut potatoes into 1/4" wedges and pat dry.
Place wedges in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until fork-tender, 4-6 minutes.Carefully remove from microwave.While potatoes microwave, in a mixing bowl, combine softened cream cheese, minced garlic and parsley, pesto, half the shredded cheese (reserve remaining for chicken), and lemon juice. Set aside. -
2 Assemble the Potatoes
Place microwaved potatoes on prepared baking sheet.
Top with 4 tsp. olive oil, garlic salt, chimichurri seasoning, and a pinch of pepper. Massage oil and seasonings into potatoes and spread into an even layer on one side of sheet. -
3 Add the Chicken
Pat chicken dry. Season both sides with a pinch of salt and pepper.
Place chicken on empty side of baking sheet. Evenly top with cream cheese topping, then remaining shredded cheese, pressing gently to adhere. -
4 Roast Potatoes and Chicken and Finish Dish
Roast in hot oven until potatoes are golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner. Carefully remove from oven.To serve, pair garlic aioli with potatoes for dipping. Bon appétit!
