Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using NY strip steak, follow same instructions as sirloin in Steps 2 and 3, cooking until steak reaches minimum internal temperature, 9-11 minutes per side. Rest, 3 minutes. Halve to serve.

  • If using chicken breasts, follow same instructions as sirloin in Steps 2 and 3, cooking until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using mahi-mahi, pat dry, halve, and season both sides with ¼ tsp. salt and a pinch of pepper. Follow same instructions as sirloin in Step 3, searing until fish reaches minimum internal temperature, 3-4 minutes per side. Fish thickness can vary; if you receive a thinner fillet, we recommend checking for doneness sooner.

    Roast the Potatoes

    Cut potatoes into 1" dice.

    Place potatoes on prepared baking sheet. Toss with 2 tsp. olive oil, seasoning blend, 1/4 tsp. salt, and a pinch of pepper. Massage oil, salt, pepper, and seasoning into potatoes.

    Spread into a single layer and roast in hot oven, 25-30 minutes.

    While potatoes roast, prepare ingredients.

    Prepare the Ingredients

    Trim bottom end from broccolini and cut into 2" lengths.

    Mince garlic.

    In a mixing bowl, combine softened butter, goat cheese (crumbling if needed), and a pinch of salt. Set aside.

    Pat steaks dry, and season both sides with 1/4 tsp. salt and a pinch of pepper.

    Sear the Steaks

    Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.

    Add steaks to hot pan, and cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Remove from burner. Rest, 3 minutes. Reserve pan; no need to wipe clean.

    While steak cooks, cook broccolini.

    Cook Broccolini and Finish Dish

    Return pan used to cook steaks to medium heat. Add 1 tsp. olive oil and garlic to hot pan, and cook, 30 seconds.

    Add broccolini and a pinch of salt and stir occasionally until tender, 5-7 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, garnishing steaks with goat cheese butter. Bon appétit!
