1 Start the Vegetables
Combine Brussels sprouts, 1 Tbsp. olive oil, and 1/4 tsp. salt in provided tray. Massage oil and seasoning into Brussels sprouts. Spread into a single layer, cut-sides down.
Bake uncovered in hot oven, 15 minutes. While Brussels sprouts bake, place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until tender, 4-6 minutes.Carefully remove from microwave. Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick. After 15 minutes, carefully remove tray from oven. Add smashed potatoes, 1 tsp. olive oil, garlic salt, and a pinch of pepper. Stir to combine and push vegetables to one side of tray. Tray will be hot! Use a utensil. -
2 Add Steaks and Bake Meal
Pat steaks dry. Season both sides with 1 tsp. olive oil, steak seasoning, 1/4 tsp. salt, and a pinch of pepper.
Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add steaks to hot pan and cook undisturbed until browned, 2-3 minutes per side.Remove from burner and transfer steaks to empty side of tray.Bake in hot oven until vegetables are browned and steaks reach a minimum internal temperature of 145 degrees, 5-7 minutes.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner. Carefully remove tray from oven. Rest, 3 minutes.Stir butter (to taste) into vegetables until melted and combined. Tray will be hot! Use a utensil. While meal bakes, continue recipe. -
3 Make Sauce and Finish Meal
In another microwave-safe bowl, combine pesto and cream cheese.
Microwave uncovered until cream cheese is melted, 30-60 seconds.Carefully remove from microwave and stir to combine. To serve, top steak with sauce and crispy tomatoes. Slice steak, if desired. Garnish vegetables with shredded cheese. Bon appétit!
