Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare the Ingredients

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    Drain tofu. Line a plate with paper towels. Cut tofu into 1" dice. Place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture. Season all over with a pinch of salt and pepper.

    Cook the Tofu

    Line another plate with a paper towel.

    Place a large non-stick pan over medium-high heat and add 2 Tbsp. olive oil.

    Add tofu to hot pan and stir occasionally until golden-brown, 6-9 minutes.

    Remove from burner. Transfer to towel-lined plate. Return pan to medium heat; no need to wipe clean.

    Make the Filling

    Add bell peppers and mangoes to hot pan. Stir occasionally, breaking up mangoes, until peppers are tender, 3-5 minutes.

    If mango is frozen, rinse under cold water until thawed.

    Stir in tofu, sweet and sour sauce, and white portions of green onions until combined and heated through, 30-60 seconds.

    Remove from burner.

    While filling cooks, continue recipe.

    Heat Tortillas, Make Slaw, and Finish Dish

    Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    In a mixing bowl, combine slaw mix, mayonnaise, hot sauce (to taste), 1/4 tsp. salt, and a pinch of pepper. Set aside.

    Plate dish as pictured on front of card, filling tortillas with filling and topping with slaw and green portions of green onions. Bon appétit!
