  1. 1

    Prepare The Ingredients

Stem, seed, remove ribs, and cut red bell pepper into ½" dice. Cut potatoes into ½" dice. Trim and thinly slice green onions on an angle, keeping white and green portions separate. Remove Italian sausage from casing. Beat eggs in a bowl

  2. 2

    Cook The Sausage

"Heat a large non-stick pan over medium-high heat. Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes." Transfer to a plate. Reserve pan; no need to wipe clean.

  3. 3

    Cook The Vegetables

In the same pan over medium high heat, add 3 tsp olive oil, half of the fajita seasoning, peppers, and potatoes. Cook until lightly browned, 3-4 minutes. Cover and cook until tender, 5-7 minutes. Remove cover and add beaten eggs and remaining fajita seasoning and cook, stirring often until cooked through, 2-3 minutes. Add green onion bottoms, and a pinch of salt and pepper to the pan. Cover and cook 3-4 minutes or until peppers are slightly tender. Add sausage and toss to combine.

  4. 4

    Add The Topping

Top skillet with cheese. Cover and cook until cheese is melted and vegetables are tender, 1-2 minutes.

  5. 5

    Finish The Dish

Plate dish as pictured on front of card, topping with salsa and hot sauce (to taste). Bon appétit!
