Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare The Ingredients

    Stem, seed, remove ribs, and cut red bell pepper into 1/2" dice.

    Cut potatoes into 1/2" dice.

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    Remove Italian sausage from casing.

    Beat eggs in a bowl

    Cook The Sausage

    "Heat a large non-stick pan over medium-high heat.

    Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes."

    Transfer to a plate. Reserve pan; no need to wipe clean.

    Cook The Vegetables

    In the same pan over medium high heat, add 3 tsp olive oil, half of the fajita seasoning, peppers, and potatoes. Cook until lightly browned, 3-4 minutes. Cover and cook until tender, 5-7 minutes.

    Remove cover and add beaten eggs and remaining fajita seasoning and cook, stirring often until cooked through, 2-3 minutes.

    Add green onion bottoms, and a pinch of salt and pepper to the pan. Cover and cook 3-4 minutes or until peppers are slightly tender.

    Add sausage and toss to combine.

    Add The Topping

    Top skillet with cheese. Cover and cook until cheese is melted and vegetables are tender, 1-2 minutes.

    Finish The Dish

    Plate dish as pictured on front of card, topping with salsa and hot sauce (to taste). Bon appétit!
