1 Prepare The Ingredients
Stem, seed, remove ribs, and cut red bell pepper into 1/2" dice.
Cut potatoes into 1/2" dice.Trim and thinly slice green onions on an angle, keeping white and green portions separate.Remove Italian sausage from casing.Beat eggs in a bowl -
2 Cook The Sausage
"Heat a large non-stick pan over medium-high heat.
Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes."Transfer to a plate. Reserve pan; no need to wipe clean. -
3 Cook The Vegetables
In the same pan over medium high heat, add 3 tsp olive oil, half of the fajita seasoning, peppers, and potatoes. Cook until lightly browned, 3-4 minutes. Cover and cook until tender, 5-7 minutes.
Remove cover and add beaten eggs and remaining fajita seasoning and cook, stirring often until cooked through, 2-3 minutes.Add green onion bottoms, and a pinch of salt and pepper to the pan. Cover and cook 3-4 minutes or until peppers are slightly tender.Add sausage and toss to combine. -
4 Add The Topping
Top skillet with cheese. Cover and cook until cheese is melted and vegetables are tender, 1-2 minutes.
