Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Prepare the Ingredients
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Finely chop cilantro (no need to stem).Zest and halve lime. Juice both halves.Peel and halve shallot. Slice half into thin strips and mince the other half.Stem jalapeño, halve, seed, remove ribs, and mince. Wash hands and cutting board after working with jalapeño. -
2 Cook the Filling
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add bell peppers to hot pan. Stir often until slightly softened, 2-3 minutes.
Add ground turkey and shallot strips. Stir occasionally until turkey reaches a minimum internal temperature of 165 degrees, 4-6 minutes.Add fiesta seasoning, 1/4 tsp. salt, and half the cilantro (reserve remaining for relish). Stir occasionally until combined, 1-2 minutes.Remove from burner. -
3 Assemble the Tacos
Place tortillas on a flat, clean work surface. Poke with a fork all over on both sides, 10 times for each tortilla. Evenly top with 2 tsp. olive oil. Massage oil into tortillas.
Evenly divide cheese between tortillas, placing on one half. Top cheese with filling. Fold tortillas over filling, pressing gently to adhere.Place tacos on prepared baking sheet. -
4 Bake the Tacos
Bake in hot oven until cheese is melted and tortillas are golden-brown, 5-8 minutes per side.
Sheet and tacos will be hot! Use caution when flipping.Carefully remove from oven.While tacos bake, continue recipe. -
5 Make Relish and Crema and Finish Dish
In a mixing bowl, combine 2 tsp. minced shallots, jalapeños (to taste), remaining cilantro, 1 tsp. lime juice (reserve remaining for crema), and a pinch of salt and pepper. Set aside.
In another mixing bowl, combine sour cream, 1/4 tsp. lime zest, reserved 1 tsp. lime juice, and 1 tsp. water. Set aside.Plate dish as pictured on front of card, topping tacos with relish (to taste) and crema. Bon appétit!
