Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

1 Assemble the Vegetables
In provided tray, combine zucchini, tomatoes, half the garlic salt (reserve remaining for meatloaves), a pinch of salt, and 2 tsp. olive oil. Push to one side.
If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions. -
2 Add the Meatloaves
In a mixing bowl, combine ground turkey, panko, half the mayonnaise (reserve remaining for topping), remaining garlic salt, and a pinch of salt and pepper.
Form meat mixture into two evenly-sized meatloaves.Place meatloaves in empty side of tray. -
3 Make Topping and Bake Meal
Bake uncovered in hot oven, 10 minutes.
While meal bakes, in another mixing bowl, combine remaining mayonnaise, half the Parmesan (reserve remaining for garnish), and pesto. Set aside.After 10 minutes, carefully remove tray from oven. Evenly top meatloaves with Parmesan-pesto mixture. Tray will be hot! Use a utensil.Bake again uncovered in hot oven until meatloaves reach a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove from oven.To serve, slice meatloaf, if desired, and top with remaining Parmesan. Garnish vegetables with goat cheese (crumbling if needed). Bon appétit!
