If using diced chicken breasts, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes.

1 Start Shrimp, Prepare Ingredients, and Make Guacamole Crema
Pat shrimp dry.
Place shrimp in provided tray and toss with 1 tsp. olive oil. Spread into a single layer.Bake uncovered in hot oven, 10 minutes.Shrimp will finish cooking in a later step.While shrimp bake, stem and tear cilantro leaves.Halve lime. Cut one half into wedges and juice the other half.In a mixing bowl, combine sour cream, guacamole (to taste), 1 tsp. lime juice, and a pinch of salt. Set aside. -
2 Add Corn and Plantains and Finish Shrimp
After 10 minutes, carefully remove tray from oven and drain any excess liquid.
Stir corn, blackening seasoning, and a pinch of salt and pepper into shrimp until combined. Push mixture to one side of tray. Tray will be hot! Use a utensil.Place plantains in now-empty side of tray. Toss with 1 tsp. olive oil and a pinch of salt. Tray will be hot! Use a utensil.Bake uncovered in hot oven until plantains are slightly browned and shrimp reach a minimum internal temperature of 145 degrees, 8-10 minutes.Carefully remove from oven.While meal bakes, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging.
Place rice in a microwave-safe bowl.Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in softened butter (to taste) and 1/4 tsp. salt until combined. Fluff rice with a fork.To serve, top rice with shrimp mixture and plantains. Garnish with guacamole crema (to taste), cilantro, and pickled onions. Squeeze lime wedges over to taste. Bon appétit!
