Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes.

    Start Shrimp, Prepare Ingredients, and Make Guacamole Crema

    Pat shrimp dry.

    Place shrimp in provided tray and toss with 1 tsp. olive oil. Spread into a single layer.

    Bake uncovered in hot oven, 10 minutes.

    Shrimp will finish cooking in a later step.

    While shrimp bake, stem and tear cilantro leaves.

    Halve lime. Cut one half into wedges and juice the other half.

    In a mixing bowl, combine sour cream, guacamole (to taste), 1 tsp. lime juice, and a pinch of salt. Set aside.

    Add Corn and Plantains and Finish Shrimp

    After 10 minutes, carefully remove tray from oven and drain any excess liquid.

    Stir corn, blackening seasoning, and a pinch of salt and pepper into shrimp until combined. Push mixture to one side of tray. Tray will be hot! Use a utensil.

    Place plantains in now-empty side of tray. Toss with 1 tsp. olive oil and a pinch of salt. Tray will be hot! Use a utensil.

    Bake uncovered in hot oven until plantains are slightly browned and shrimp reach a minimum internal temperature of 145 degrees, 8-10 minutes.

    Carefully remove from oven.

    While meal bakes, continue recipe.

    Heat Rice and Finish Meal

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    Place rice in a microwave-safe bowl.

    Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Stir in softened butter (to taste) and 1/4 tsp. salt until combined. Fluff rice with a fork.

    To serve, top rice with shrimp mixture and plantains. Garnish with guacamole crema (to taste), cilantro, and pickled onions. Squeeze lime wedges over to taste. Bon appétit!
