    Make the Bagel

    Thoroughly rinse produce and pat dry. Toast bagel until lightly toasted, 2-3 minutes. Core tomato and cut into ¼" dice. In a mixing bowl, combine guacamole, sour cream, and a pinch of salt and pepper. Spread guacamole-sour cream mixture on bagel. Top with tomato, goat cheese (crumbling with your hands, if necessary), and pistachios. Bon appétit!
