Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Thoroughly rinse any fresh produce and pat dry. Halve lime. Drain pulled pork and separate pieces.
In one provided tray, combine poblano, onion, 1 tsp. water, 1/4 tsp. salt, a pinch of pepper, and chipotle seasoning (to taste).Microwave uncovered until lightly softened, 2-3 minutes.Carefully remove from microwave. Stir in corn.Microwave again uncovered, 30 seconds.Carefully remove from microwave. Squeeze one lime half into tray and add 1 tsp. olive oil.In second provided tray, combine pulled pork and BBQ sauce. Top with cheese.Cover tray with a damp paper towel. Microwave covered until heated through, 2-3 minutes.Carefully remove from microwave. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.To serve, place pork mixture in tortillas and top with vegetables. Bon appétit!

Bake uncovered, 5 minutes.While vegetables bake, wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.Carefully remove both trays from oven. Squeeze one lime half into vegetable tray and add 1 tsp. olive oil.To serve, place pork mixture in tortillas and top with vegetables. Bon appétit!
