Prepare The Ingredients
Cut mushrooms into 1/4" slices. Place half in fridge for the next day.
Form half of the ground beef into four patties, 5" in diameter. Place in fridge for the next day.Mix ground beef, panko, half the swiss cheese, and half the garlic salt (reserve remaining for potatoes) in mixing bowl until completely combined. Form into sixteen equally-sized meatballs.Once water is boiling, add pasta and cook until al dente, 11-13 minutes -
Cook The Meatballs
Place a large non-stick pan over medium heat and add 1 tsp. olive oil. Add meatballs to hot pan and rolling occasionally until browned all over and meatballs reach a minimum internal temperature of 160 degrees, 10-14 minutes.
Transfer meatballs to a plate and tent. -
Make Sauce and Finish The Dish
In the same pot used for the pasta over medium heat, add 2 tsp olive oil, half the mushrooms, 1/4 tsp salt and a pinch of pepper. Cook, stirring occasionally, until lightly browned, 4-6 minutes. Add cream base, two demi packets, mustard, and peas. Bring to a simmer. Add meatballs and pasta and toss to combine. Top with red pepper flakes (to taste).

Roast The Potatoes and Cook The Patties
Cut potatoes into ¼" fries and pat dry. Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, remaining garlic salt, and a pinch of pepper. Massage seasoning into potatoes. Spread into a single layer and bake in hot oven until lightly browned, 25-28 minutes, tossing fries halfway through.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil. Add mushrooms to hot pan and stir occasionally until browned, 4-6 minutes. Add demi and bring to a simmer. Transfer to a plate. Reserve pan; no need to wipe clean.Season patties with 1/2 tsp salt and a pinch of pepper. In the same pan over medium-high heat, add 1 tsp olive oil and patties to hot pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side. Top with remaining swiss cheese and mushrooms. Cover and cook until cheese is melted, 2-3 minutes. -
Finish The Dish
Add buns to oven rack and toast until lightly browned, 1-2 minutes.
Spread mayo evenly on bottom buns and top with patties and top buns.
