    Microwave Instructions

    Thoroughly rinse any fresh produce and pat dry. Drain beef and pat dry. Although tenderloin will be pink upon arrival, it has been pre-cooked and simply needs to be heated through.

    Stem and tear cilantro leaves. Halve lime. Cut one half into wedges and juice the other half.

    In provided tray, combine corn and 1 tsp. olive oil. Microwave uncovered until corn is heated through, 1-2 minutes.

    Carefully remove from microwave. Transfer corn to a mixing bowl. Add beef to now-empty tray and shred with two forks. Add chile and cumin rub and a pinch of salt.

    Cover tray with a damp paper towel. Microwave covered until beef is heated through, 2-3 minutes.

    Carefully remove from microwave.

    Add cilantro, crema, 1 Tbsp. lime juice, and a pinch of salt and pepper to bowl with corn and stir to combine. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    To serve, fill tortillas with beef, corn mixture, cheese, and crispy jalapeños (to taste). Squeeze lime wedges over to taste. Bon appétit!

    Oven Instructions

    Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Drain beef and pat dry. Although tenderloin will be pink upon arrival, it has been pre-cooked and simply needs to be heated through.

    Place tray on a baking sheet. Bake uncovered in hot oven until corn is heated through, 6-8 minutes.

    Carefully remove from oven. Transfer corn to a mixing bowl. Add beef to now-empty tray and shred with two forks. Add chile and cumin rub and a pinch of salt.

    Cover tray with foil and place on a baking sheet. Bake again covered in hot oven until beef is heated through, 10-12 minutes.

    Carefully remove from oven. Add cilantro, crema, 1 Tbsp. lime juice, and a pinch of salt and pepper to bowl with corn and stir to combine. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    To serve, fill tortillas with beef, corn mixture, cheese, and crispy jalapeños (to taste). Squeeze lime wedges over to taste. Bon appétit!
