Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    Roast the Fries

    Cut potatoes into 1/2"-thick wedges and pat dry. Place fries on prepared baking sheet and toss with 2 tsp. olive oil, lemon n herb seasoning, and a pinch of salt. Spread into a single layer.

    Roast in hot oven until golden-brown and tender, 25-30 minutes, flipping once halfway through.

    Carefully remove from oven.

    While fries roast, continue recipe.

    Make the Caramelized Onions

    Halve, peel, and thinly slice onion.

    Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add onions to hot pan and stir occasionally until softened, 3-5 minutes.

    Reduce heat to medium-low and stir occasionally until onions have a deep caramel color, 15-20 minutes.

    To help caramelize onions evenly, add 1 Tbsp. water as necessary, as onions begin to brown.

    Remove from burner.

    While onions caramelize, continue recipe.

    Make the Aioli

    Halve lemon and juice.

    Mince garlic.

    In a mixing bowl, combine mayonnaise, 2 tsp. lemon juice (reserve remaining for arugula), garlic, 2/3 the blue cheese (to taste; reserve remaining for topping burgers), hot sauce (to taste), and a pinch of salt and pepper. Mash with a fork to break up cheese and thoroughly combine. Set aside.

    Make the Burgers

    Combine ground beef and a pinch of salt and pepper into two equally-sized patties, about 5" across. Season all over with 1/2 tsp. salt and 1/4 tsp. pepper.

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.

    Add burgers to hot pan. Sear until charred and burgers reach a minimum internal temperature of 160 degrees, 3-5 minutes per side, topping with remaining blue cheese (to taste) after flipping.

    Remove from burner.

    Toast Buns, Dress Arugula, and Finish Dish

    Drizzle cut-side of buns with 2 tsp.olive oil and season with a pinch of salt and pepper. Place directly on oven rack in hot oven, cut-sides up. Toast until lightly browned, 3-4 minutes.

    While buns toast, combine arugula, 1/2 tsp. olive oil, 1/2 tsp. remaining lemon juice, and a pinch of salt and pepper in another mixing bowl. Set aside.

    Carefully remove buns from oven. Spread half the aioli (to taste; reserve remaining for dipping fries) on cut-side of top bun.

    Plate dish as pictured on front of card, topping bottom bun with caramelized onions, cheese-topped patty, crispy onions, arugula, then top bun. Serve remaining aioli on side for dipping fries. Bon appétit!
