Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    prep

    quarter mushrooms

    slice green onion, operate greens and white

    halve cherry tomatoes

    mince garlic

    cooking the pasta

    bring 8 cups water to a boil with 2 t salt

    cook pasta for 10-12 minutes until al dente

    strain and reserve 1 C pasta water

    making the sauce

    in a large non stick over medium high heat add 2 t olive oil

    sear shrimp w/ 1/4 t salt , remove from pan

    add 2 t olive oil and mushrooms to pan and saute for 3-4 minutes

    add garlic, cajun seasoning and white part of green onion sweat for 1-2 minutes on medium heat

    add shrimp back to pan with pasta, tomatoes and 1/2 cup of pasta water

    add butter and cheese and stir in to melt

    remove from heat and add sour cream and green part of onions
