Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Drain black beans and rinse in a wire-mesh strainer.
Halve green bell peppers, stem, and remove ribs and seeds.In a mixing bowl, combine ground turkey, seasoning blend, rice, and 3/4 cup water. Mix thoroughly until mixture forms a sticky paste. Don't worry if it seems like too much water; mixture will absorb liquid. Keep stirring!Fill pepper halves evenly with ground turkey mixture. -
Cook the Meal
Place slow cooker liner in slow cooker, if desired. Fold top edges in before putting on lid.
Add mirepoix blend, 1/4 cup water, 1 tsp. salt, and 1/2 tsp. pepper to clean slow cooker. Top with stuffed peppers, filling-side up, then black beans and tomato sauce.Turn slow cooker on to high heat. Cover, and cook until turkey reaches a minimum internal temperature of 165 degrees, 4 hours. -
Add the Cheese
When peppers have ten more minutes to cook, top with cheese. Cover again, and cook until melted.
