You Will Need
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Ground Pork 160° F
Prepare the Ingredients
Drain black beans and rinse in a wire-mesh strainer.
Halve green bell peppers, stem, and remove ribs and seeds.In a mixing bowl, combine ground turkey, seasoning blend, rice, and 3/4 cup water. Mix thoroughly until mixture forms a sticky paste. Don't worry if it seems like too much water; mixture will absorb liquid. Keep stirring!Fill pepper halves evenly with ground turkey mixture.
Cook the Meal
Place slow cooker liner in slow cooker, if desired. Fold top edges in before putting on lid.
Add mirepoix blend, 1/4 cup water, 1 tsp. salt, and 1/2 tsp. pepper to clean slow cooker. Top with stuffed peppers, filling-side up, then black beans and tomato sauce.Turn slow cooker on to high heat. Cover, and cook until turkey reaches a minimum internal temperature of 165 degrees, 4 hours.
Add the Cheese
When peppers have ten more minutes to cook, top with cheese. Cover again, and cook until melted.
Finish the Dish
Plate dish as pictured on front of card, topping with guacamole and tortilla strips. Bon appétit!
