Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    roast peppers

    cut peppers in halve, seed them and place on prepared tray cut side down 400 for 14-16

    ¼ inch dice tomatoes rough chop pickles mince shallot

    medium non stick, ½t oil in pan medium high heat add beef to pan w/ pinch of pepper and seasoned salt cook 2-3, stir cook another 2-3 stirring occasionally add shallot to pan cook 30-60 add pickles, ½ the tomatoes and demi w/ 2T water cook 2-3

    stuff peppers

    place filling in the peppers, top w/ other ½ of the tomatoes, cheese and return to oven for 2-3 until cheese melts
