If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Start the Potatoes
Prick potatoes all over with a fork.
Place potatoes on a microwave-safe plate and cover with a damp paper towel.Microwave covered until slightly tender, 8-10 minutes.Carefully remove from microwave.Transfer potatoes to prepared baking sheet and evenly top with 2 tsp. olive oil, potato spice seasoning, and 1/4 tsp. pepper. Potatoes will be hot! Use caution.Roast in hot oven until potatoes are browned and tender, 30-35 minutes, flipping once halfway through.While potatoes roast, continue recipe. -
2 Prepare the Ingredients
Cut broccoli into bite-sized pieces.
Trim and thinly slice green onions.Pat sliced pork dry. Coarsely chop, then separate pieces. -
3 Cook the Broccoli
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.
Add broccoli and 1/4 cup water to hot pan. Stir to combine and bring to a simmer.Once simmering, cover and cook until water is almost completely evaporated, 4-6 minutes.Uncover and add 1/4 tsp. salt and garlic pepper. Stir occasionally until broccoli is tender, 2-3 minutes.Remove from burner.While broccoli cooks, continue recipe. -
4 Cook the Pork Mixture
Place another large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add sliced pork, garlic salt, and 1/4 tsp. pepper to hot pan. Stir occasionally until browned and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.Add BBQ sauce and 2 Tbsp. water. Stir often until combined and pork is coated, 1-2 minutes.Evenly top with cheese. Cover and cook until cheese is melted, 1-2 minutes.Remove from burner. Rest, 3 minutes. -
5 Finish Potatoes and Finish Dish
After 30-35 minutes, carefully remove sheet from oven. Transfer potatoes to a clean, flat work surface. Let cool, at least 5 minutes.
After 5 minutes, or once potatoes are cool enough to handle, halve potatoes, making sure not to cut all the way through.Evenly top with 1/4 tsp. salt and softened butter. Fluff potatoes with a fork. Plate dish as pictured on front of card, topping potatoes with pork mixture. Garnish with sour cream and green onions. Bon appétit!
