Back in our youth, a certain pop star with one name had a hit record with a song called “Dress You Up.” That song comes to mind when pondering this chicken, not in the least because it’s a big 80s music fan. All jokes aside, this bird is adorned with flavor: sweet and slightly spicy BBQ and chipotle mayo underneath, and crispy onions all over its body (well, breast). Could've been worse; we could've tried to write this description to “Wake Me Up Before You Go Go.”

Cooking Guidelines

1 Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Cut cauliflower florets into bite-size pieces.Coarsely crush crispy onions.In a mixing bowl, combine half the chipotle mayonnaise, BBQ sauce, and green portions of green onions. Taste, and add remaining chipotle mayonnaise if desired. Set aside.Pat chicken breasts dry, and season both sides with a pinch of salt and pepper.If using salmon or pork, follow same instructions, seasoning salmon on flesh side. -
2 Start the Cauliflower
Place cauliflower on prepared baking sheet and toss with 2 tsp. olive oil and meatloaf seasoning. Massage oil and seasoning into cauliflower.
Spread into a single layer on one half of baking sheet. Roast in hot oven until starting to brown, 10-12 minutes.While cauliflower roasts, cook chicken. -
3 Start the Chicken
Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add chicken to hot pan and cook until browned, 2-3 minutes per side.
Transfer to empty half of baking sheet. Chicken will finish cooking in a later step.If using pork, follow same instructions. If using salmon, follow same instructions, searing only on flesh side until golden brown, 2-4 minutes. -
4 Finish the Chicken and Cauliflower
Top cauliflower evenly with cheese and white portions of green onions.
Bake until cauliflower is tender and chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes.If using salmon, follow same instructions, roasting until salmon is firm and reaches a minimum internal temperature of 145 degrees, 7-10 minutes. If using pork, follow same instructions, roasting until chops reach a minimum internal temperature of 145 degrees, 6-9 minutes. -
5 Finish the Dish
Plate dish as pictured on front of card, spreading chipotle-BBQ mixture evenly on chicken, then topping with crushed crispy onions. Bon appétit!
