1 Cook The Rice
"Bring a small pot with rice, minced garlic, and 1½ cups water to a boil. Reduce to a simmer, cover, and cook until rice is tender, 18-20 minutes. Remove from burner and set aside. While rice cooks, prepare ingredients."

2 Prepare The Ingredients
Mince garlic Stem, seed, remove ribs, and cut red bell pepper into 1" dice. Trim zucchini ends, halve lengthwise, and cut into ½” half-moons. Trim and thinly slice green onions on an angle, keeping white and green portions separate.

3 Cook The Shrimp
Heat 1 tsp. olive oil in a large non-stick pan over medium-high heat. Add shrimp and a pinch of salt and pepper to hot pan and cook until opaque and shrimp reaches a minimum internal temperature of 145 degrees, 2-3 minutes per side. Transfer to a plate. Reserve pan; no need to wipe clean.

4 Cook The Vegetables
In the same pan over medium high heat, add 2 tsp olive oil and peppers and cook, stirring occasionally, until slightly tender, 3-5 minutes. Add zucchini, green onion bottoms, and garlic salt and cook 3-4 minutes. Stir in cream and tomatoes and bring to a simmer.
