You Will Need
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Start the Vegetables
Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry.
Combine broccoli, peppers, 2 tsp. olive oil and seasoning blend in provided tray. Spread into a single layer.
Bake uncovered in hot oven, 5 minutes.
Add the Chicken
Carefully remove tray from oven and stir vegetables. Push to one side. Tray will be hot! Use a utensil.
Pat chicken dry. Place chicken in empty side of tray and top with 1 tsp. olive oil and a pinch of salt and pepper.
Bake and Finish the Meal
Bake uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 25-30 minutes.
While meal bakes, combine pesto and mayonnaise in a mixing bowl.
Carefully remove tray from oven. Top chicken with half the sauce, then crispy red peppers, pressing gently to adhere. Top chicken with remaining sauce. Garnish vegetables with cheese. Bon appétit!
