    PREPARE INGREDIENTS

    stem and slice mushroom caps into ¼" strips. Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    MAKE SLAW

    inn a medium bowl combine slaw, mayo, 4 tsp olive oil and cajun seasoning. mix well and reserve for later use,

    MAKE FRITTERS

    Place medium Non stick over medium heat with canola oil. in a large bowl combine corn muffin mix with ¼ cup of water until smooth. add sliced mushrooms, green onion bottoms and mix well. spoon 1 Tbsp of mixture into hot oil and cook for 2-4 minutes per side until golden brown. season fritters with ¼ tsp salt.
