To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Chicken 165° F |

  1. 1

    Make the Meatloaves

Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided trays with cooking spray.

In a mixing bowl, combine ground beef, BBQ spice rub (use less if spice-averse), panko, 1/4 tsp. salt, and a pinch of pepper. Form into 4 evenly-sized, oval-shaped loaves, about 2" thick and 3" wide.

Place meatloaves in one prepared tray and top with 1/3 the BBQ sauce (reserve remaining for garnish).

  2. 2

    Prepare the Mashed Potatoes

    Tear spinach into smaller pieces.

In second tray, combine mashed potatoes and buttermilk-dill seasoning. Stir vigorously to combine.

Top with spinach, crème fraîche, garlic salt, and 1 tsp. olive oil. Crème fraîche will melt as meal bakes.

    Cover tray with foil.

  3. 3

    Bake the Meal

Bake both trays (mashed potatoes covered, meatloaves uncovered) in hot oven, 10 minutes.

Carefully remove both trays from oven.

Top meatloaves with brown sugar. Uncover mashed potatoes and vigorously stir until combined.

Bake again (both trays uncovered) in hot oven until mashed potatoes are heated through and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.

    Carefully remove from oven.

To serve, garnish meatloaves with remaining BBQ sauce (using a clean utensil). Bon appétit!
