Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Peel and mince shallot.
Core tomato and cut into ½" dice.
On a separate cutting board, remove Italian sausage from casing.
Cook the Sausage and Vegetables
Place a large non-stick pan over medium-high heat.
Add 1 tsp. olive oil, Italian sausage, shallot, and tomato to hot pan. Break sausage into small pieces with a spoon until no pink remains, 4-6 minutes.
Make the Sauce
Add red cooking wine and cook until almost completely evaporated, 1-2 minutes.
Add marinara and stir to combine.
Add pasta and stir to thoroughly combine. Cook until pasta is warmed through, 1-2 minutes.
Season with a pinch of pepper.
Finish the Dish
