The sausage is complemented and high-lighted here by earthy spinach, creamy wine sauce, and perfect penne. Garlic bread on the side just ties a bow on top of perfection. Tip: Make quick work of mincing garlic by smashing the whole clove with the side of your chef's knife. Then rock the knife back and forth, keeping the tip steady by resting your other hand over the top._

Cooking Guidelines

Cook the Pasta
Once water is boiling, add pasta and cook until al dente, 10-12 minutes.
Reserve 1 cup pasta cooking water. Drain pasta in a colander and set aside.While pasta cooks, prepare ingredients. -
Prepare the Ingredients
Mince garlic.
Coarsely chop spinach.Halve French rolls, if necessary.On a separate cutting board, remove Italian sausage from casing. -
Cook the Sausage
Place a large non-stick pan over medium-high heat.
Add Italian sausage to hot pan and cook, breaking into small pieces with a spoon, until no pink remains, 4-6 minutes.Remove from burner. -
Make the Garlic Bread
Combine garlic and 2 Tbsp. olive oil in a mixing bowl. Place rolls on prepared baking sheet, cut side up, and brush or gently spoon with garlic-olive oil.
Bake in hot oven until bread is golden brown, 6-8 minutes.While bread bakes, make sauce. -
Make Sauce and Finish Dish
Return pan with sausage to medium-high heat. Add white wine and cook until almost evaporated, 30-60 seconds.
Add half the reserved pasta cooking water, chicken demi-glace, and cream. Bring to a boil.Once boiling, cook, stirring occasionally, until slightly thickened, 3-4 minutes. Add spinach and stir until wilted, 30 seconds.Remove from burner. Stir in pasta and a pinch of salt and pepper. If too thick, add additional pasta cooking water, 1 Tbsp. at a time, until desired consistency is achieved.Plate dish as pictured on front of card. Bon appétit!
