You Will Need
Large Non-Stick Pan
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Line a plate with a paper towel. Cut tofu into 1" dice and place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.
Cut broccoli into bite-sized pieces.
Coarsely chop cilantro (no need to stem).
Coarsely chop peanuts
Halve lime. Cut one half into wedges and juice the other half.
Quarter apple and remove core. Cut into ¼" slices.
Cook Tofu and Prepare Grain Blend
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add tofu to hot pan and stir occasionally until golden brown, 6-8 minutes.
Transfer to a plate. Reserve pan; no need to wipe clean.
Carefully massage grain blend in bag to break up any clumps. Tear a small slit in an upper corner of bag to vent. Place upright in microwave and heat, 45 seconds. Remove rice from packaging.
Make the Stir-Fry
Return pan used to cook tofu to medium heat. Add broccoli and 2 Tbsp. water to hot pan. Cover, and cook until water is almost completely evaporated, 5-7 minutes. Uncover, and stir occasionally until tender, 2-3 minutes.
Add grain blend, tofu, and ¼ cup water. Stir occasionally until heated through, 5-7 minutes.
Remove from burner.
Make Salsa and Finish Dish
In a mixing bowl, combine garlic, lime juice, vinegar, peanuts, cilantro, and garlic oil.
Plate dish as pictured on front of card, topping stir-fry with salsa (to taste). Serve apple slices on the side. Bon appétit!
