  • Salt
  • 1 Baking Sheet
  • 1 Mixing Bowl
  • 1 Large Non-Stick Pan

Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Vegetables

    Quarter potatoes. If larger than a ping-pong ball, cut into 6-8 wedges.

    Core tomato and cut into 1/2" dice. Season all over with a pinch of salt.

    Prepare the Tofu

    Line a plate with a paper towel. Cut tofu into 1" dice and place on towel-lined plate. Top with paper towels, then press gently, but firmly to remove excess moisture.

    Coat the Tofu and Potatoes

    In a mixing bowl, combine tofu, potatoes, cornstarch, and chile and cumin rub. Gently toss to coat.

    Fry the Tofu and Potatoes

    Line a plate with a paper towel.

    Place a large non-stick pan over medium-high heat and add 3 Tbsp. olive oil. Add tofu and potatoes to hot pan and stir occasionally until golden-brown, 6-8 minutes.

    Remove from burner. Transfer to towel-lined plate and season all over with a pinch of salt.

    While tofu and potatoes cook, continue recipe.

    Toast Flatbreads and Finish Dish

    Spread butter evenly over flatbreads. Place flatbreads on prepared baking sheet.

    Toast in hot oven until lightly browned, 3-5 minutes.

    Carefully remove from oven.

    Plate dish as pictured on front of card, filling flatbreads with potato-tofu mixture, tomatoes, cheese, and tzatziki. Bon appétit!
