For a rainy day... if cooking indoors, preheat oven to 400 degrees. Prepare a baking sheet with foil and cooking spray. Place zucchini and onion on prepared baking sheet and combine. Spread into a single layer and roast in hot oven until zucchini is tender, 8-10 minutes. Pat chicken dry, and season both sides with a pinch of salt and pepper. Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Place pork chops in hot pan and cook until golden brown and chops reach a minimum internal temperature of 165 degrees, 5-7 minutes per side. Remove from pan and wipe pan clean. Return pan to medium heat and add marinara. Stir until heated through, 1-2 minutes Follow same plating instructions, topping vegetables with marinara before other garnishes.
