Burgers nowadays can be elaborate layers of toppings: everything from avocado to zucchini, and all things in between. But we shouldn’t ignore all the classic toppings in the wave of the new. Meaty mushrooms, those little bursts of umami flavor, and funky Swiss has been the tops of burger toppings for years, and they work their wonders here. And with a schmear of garlic aioli on the bun? Completely classic.
