1 Form the Meatballs
Crush crackers until consistency of breadcrumbs.
In a mixing bowl, combine ground pork, crushed crackers, crème fraîche, garlic salt, and 1/4 tsp. pepper. Form into 16 evenly-sized meatballs. -
2 Cook the Meatballs
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add meatballs to hot pan and roll around until browned all over, 3-4 minutes.
Meatballs will finish cooking in a later step. -
3 Add the Sauce
Add marinara, pesto (use less if spice-averse), 1/4 tsp. salt, 1/4 tsp. pepper, and 1/2 cup water to hot pan. Cover and bring to a simmer.
Once simmering, cook until meatballs reach a minimum internal temperature of 160 degrees, 6-8 minutes. -
4 Add the Pasta and Peas
Uncover and add pasta, peas, half the cheese (reserve remaining for garnish), 1/4 tsp. salt, and a pinch of pepper to hot pan. Stir occasionally until pasta is coated and heated through, 1-2 minutes.
Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, garnishing with remaining cheese and red pepper flakes (to taste). Bon appétit!
