Place a large oven-safe pan over medium heat and add 1 Tbsp. olive oil. Add turkey to hot pan and sear undisturbed until lightly browned, 5-7 minutes.Transfer turkey to one side of prepared baking sheet. Add green beans, 1 tsp. olive oil, and a pinch of salt and pepper to empty side and spread into a single layer. Massage oil into green beans. Roast in hot oven until turkey reaches a minimum internal temperature of 165 degrees and green beans are tender, but still crisp, 10-15 minutes.Remove turkey to a plate and rest at least 5 minutes.Reserve pan; no need to wipe clean. While turkey and green beans roast, mash potatoes.

If potatoes are too thick, add hot water, 1 Tbsp. at a time, until desired consistency is reached.Season with a pinch of salt and pepper.
Make the Gravy
Add 1 cup water to the hot pan used to sear turkey, scraping the bottom of the pan with a wooden spoon to loosen up the tasty browned bits.
Transfer water to a cup or bowl. Return pan to medium-high heat. Add butter and stir until melted, 30-60 seconds.Add flour and stir constantly until fully incorporated, 1-2 minutes.Cook, 30-60 seconds.Add reserved water. Bring to a boil and whisk until thoroughly combined, 2-3 minutes.
