To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

  1. 1

    Start the Vegetables

Spray provided tray with cooking spray.

Place pepper and onion mix in prepared tray and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer.

Bake uncovered in hot oven, 8 minutes.

While vegetables bake, finely tear spinach.

After 8 minutes, carefully remove tray from oven. Stir in spinach, diced tomatoes, half the Italian seasoning blend (reserve remaining for pork), half the garlic salt (reserve remaining for pork), and a pinch of pepper until combined. Tray will be hot! Use a utensil.

  2. 2

    Add Pork and Bake Meal

Pat pork dry. Season all over with remaining Italian seasoning blend, remaining garlic salt, 1/4 tsp. salt, and a pinch of pepper.

Evenly top vegetables with pork and 1 tsp. olive oil.

Bake uncovered in hot oven until vegetables are tender and pork reaches a minimum internal temperature of 145 degrees, 14-16 minutes.

Medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.

Carefully remove tray from oven. Rest, 3 minutes.

    While meal bakes, continue recipe.

  3. 3

    Heat Couscous and Finish Meal

In a microwave-safe bowl, combine couscous, a pinch of salt, 1 Tbsp. water, and butter (to taste).

Microwave uncovered until butter is melted and couscous is heated through, 3-4 minutes.

Carefully remove from microwave and stir to combine.

To serve, top vegetables with pork. If desired, top pork with some vegetables. Bon appétit!
