Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Follow same instructions as ground pork in Step 4, stirring occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using ground turkey, follow same instructions as ground pork in Step 4, breaking up until turkey reaches minimum internal temperature, 7-9 minutes.

  • If using steak strips, pat dry, coarsely chop, then separate pieces. Follow same instructions as ground pork in Step 4, stirring occasionally until steak strips reach minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

    Toast the Tortillas

    Poke tortillas with a fork all over, 10 times for each tortilla.

    Place tortillas on prepared baking sheet. Top with 1 tsp. olive oil. Massage oil into tortillas.

    Toast in hot oven until lightly browned and crispy, 4-6 minutes.

    Tostadas are a delicious, but messy treat. For this recipe, they can easily be converted to tacos. Simply warm tortillas in oven for 1-2 minutes after completing steps.

    While tortillas toast, continue recipe.

    Prepare the Ingredients

    Halve lime and juice.

    Stem and coarsely chop cilantro.

    In a wire-mesh strainer, drain and rinse black beans.

    Peel and halve shallot. Cut one half into thin slices and mince the other half.

    In a mixing bowl, combine sliced shallots, 1 Tbsp. lime juice (reserve remaining for crema), and 1 Tbsp. water. Set aside to quick-pickle, at least 5 minutes.

    While shallots quick-pickle, continue recipe.

    Cook the Beans

    Place a medium pot over medium heat and add 2 tsp. olive oil. Add minced shallots to hot pot. Stir occasionally until tender and lightly browned, 2-3 minutes.

    Add beans, a pinch of pepper, chile and cumin rub, and 1/4 cup water. Bring to a simmer. Once simmering, stir occasionally until beans are soft, 3-5 minutes.

    Gently mash beans until consistency of mashed potatoes. If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.

    Stir in half the cilantro (reserve remaining for garnish) and cheese until melted and combined.

    Remove from burner.

    While beans cook, continue recipe.

    Cook the Ground Pork

    Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.

    Add ground pork, chipotle seasoning (use less if spice-averse), 1/4 tsp. salt, and 1/4 tsp. pepper to hot pan. Break up until no pink remains and ground pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes.

    Stir in 1/3 the sour cream (reserve remaining for crema) until combined.

    Remove from burner.

    Make Crema and Finish Dish

    In another mixing bowl, combine remaining sour cream and 1 tsp. remaining lime juice.

    Plate dish as pictured on front of card, topping tostadas with beans, ground pork, crema, pickled shallots, and remaining cilantro. Bon appétit!
