Customize It Instructions
If using Impossible burger, follow same instructions as ground pork in Steps 2 and 3, baking uncovered in hot oven until burger is heated through, 25-30 minutes.

Prepare the Ingredients
Preheat oven to 400 degrees.
Combine rice, 2 Tbsp. water, corn, and seasoning rub in provided tray.
Add the Pork
Top rice with ground pork, breaking pork evenly into small clumps. Top evenly with ¼ tsp. salt, a pinch of pepper, enchilada sauce, cheese.
Finish the Dish
Bake uncovered in hot oven until pork is browned and reaches a minimum internal temperature of 160 degrees, 25-30 minutes.
Carefully, remove from oven. Garnish with crispy tortilla strips and sour cream. Bon appétit!
