Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground beef, add meatballs to hot pan and cook until beef reaches minimum internal temperature, 10-12 minutes. 

  • If using ground turkey, add meatballs to hot pan and cook until turkey reaches minimum internal temperature, 11-13 minutes.

    Cook the Rice

    Bring a small pot with rice, 1 1/4 cups water, and half the garlic salt (reserve remaining for meatballs) to a boil.

    Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

    Remove from burner. Set aside and cover to keep warm.

    While rice cooks, continue recipe.

    Prepare Ingredients and Make Sauce

    Coarsely crush peanuts.

    Remove stem, seeds, and ribs, and cut bell pepper into 1/4" slices.

    Mince cilantro (no need to stem).

    Zest and halve lime. Cut one half into wedges and juice the other half.

    In a mixing bowl, combine ginger, coconut milk, half the ramen pork base (reserve remaining for meatballs), curry powder, and 2 Tbsp water. Don't worry if coconut milk has solidified. It is part of natural processes. Break up as needed. Set aside.

    Form the Meatballs

    In another mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.

    After 1 minute, add ground pork, remaining ramen pork base, remaining garlic salt, and a pinch of pepper. Stir until thoroughly combined.

    Form meat mixture into 8 equally-sized meatballs.

    Start the Meatball Curry

    Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.

    Add bell peppers to hot pan. Stir occasionally until slightly tender, 3-5 minutes.

    Add meatballs and roll occasionally until browned all over, 2-4 minutes.

    Finish Meatball Curry and Finish Dish

    Add sauce to hot pan. Stir to combine and bring to a simmer.

    Once simmering, cover and stir occasionally until meatballs reach a minimum internal temperature of 160 degrees, 4-6 minutes.

    Remove from burner. Stir in 1/4 tsp. lime zest and 1 tsp. lime juice until combined.

    Plate dish as pictured on front of card, topping meatballs with peanuts and garnishing with cilantro. Squeeze lime wedges over dish to taste. Bon appétit!
