Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Assemble the Enchiladas
Drain pulled pork and separate pieces.
Combine pulled pork, softened cream cheese, and corn in a mixing bowl. Set aside.Place tortillas on a clean, flat work surface. Divide filling equally among tortillas, placing in center of tortillas. Roll tortillas, seam-side down. There may be leftover filling. Feel free to use as you please! -
2 Start the Meal
Coat bottom of provided tray with 1/4 cup enchilada sauce (to taste; reserve remaining for topping).
Place enchiladas in tray, seam-sides down, and evenly top with remaining enchilada sauce (to taste). Cover tray with foil.Bake covered in hot oven until enchiladas are warmed through, 20-22 minutes.Carefully remove from oven and remove foil. -
3 Add Cheese and Finish Meal
Evenly top with shredded cheese.
Bake again uncovered in hot oven until cheese is melted, 4-6 minutes.Carefully remove from oven. Rest, 3 minutes.To serve, top enchiladas with sour cream. Bon appétit!
